Frankfurter Ingredients

Instructions

  • Clean your meat of any silver skin, sinew, arteries and cut into small strips or cubes.
  • Place in the freezer for an hour or until the temp reaches   1 centigrade
  • Grind your very chilled meat and fat separately 2 times.
    • First on a 10mm plate
    • then on a 6mm plate.
      • Be sure that you meat and fat are very cold during this process and keep them separate. Have your meat in one bowl and your fat in a different bowl.
  • Add the salt and the cure to the meat only and mix well to combine. Cover and refrigerate overnight. Place the fat in the fridge as well.
  • The next day prepare all of your seasonings 
  • Take your meat and fat out of the fridge and rechill it. Once your meat gets to 32F place the meat only in your food processor.
  • Chop your meat for 60 seconds.
  • Half way through add 1/3 of the ice 330 g/kg and continue chopping for another 20 seconds.
  • The end result should be a smooth farce (batter) During this step we want our meat’s temperature to remain under 4c.
  • Once your meat has been properly chopped add the fat and another 1/3 of the ice and continue to chop on high. Run the food processor for 60 – 75 seconds till you achieve a smooth paste again
  • then add the rest of the seasonings, the nonfat dry powder milk, and the rest of the ice.
  • Chop for another 60 seconds or till everything is well incorporated. During this step we don’t want our meat to exceed 55F
  • Stuff your mince meat into the sheep casings, link, and prick out any air pockets and let rest in the fridge overnight.
  • The next day bring a pot of water to 80c . Poach the sausages for 1 minute for every “mm” that your casing is wide. If you used 22mm – 24mm casings then poach for 22-24 minutes.
  • Make sure the temperature does not exceed  80c – 176F
  • Once poached, cool the sausages down and refrigerate or freeze. To eat simply heat back up by grilling, deep frying, or poaching. Serve with a side of chips (french fries)

Fresh Chicken Frankfurter-Style Sausage (No Cure, Neutral Flavor)

Batch size: 1 kg meat


INGREDIENTS

Meat

  • 500 g chicken breast (skinless, boneless)
  • 500 g chicken thigh (skinless, boneless)

Salt, Binder, Liquid

  • 18 g kosher salt (1.8%)
  • 5 g sugar
  • 25 g nonfat dry milk powder  -> Smoother
  • 20 g egg white powder ->  Smoother
  • 100 g fine breadcrumbs / rusk  -> Smoother
  • 285 g crushed ice

Color System (Balanced, Non-Dominant)

  • 4.0 g sweet paprika (not smoked)
  • 0.06 g turmeric extract (curcumin extract, not powder)
  • 0.03 g saffron threads (30 mg)

Saffron preparation

  • Crush threads to powder
  • Bloom in 15 g water at 45–50°C
  • Steep 10–15 minutes
  • Add the liquid only (counts toward total water)

Seasonings (Frankfurter-leaning, Poultry-masking)

  • 5 g garlic powder
  • 5 g onion powder
  • 2.5 g ground coriander
  • 1.6 g white pepper
  • 0.8 g nutmeg
  • 0.8 g ground ginger
  • 0.4 g mace
  • 0.3 g ground cardamom

Casings

  • Sheep casings, 22–24 mm

PROCESS

1. Trimming & Pre-Chilling

  • Remove all sinew and connective tissue.
  • Dice breast and thigh separately into small cubes.
  • Chill in freezer until meat reaches 0–1°C (32–34°F).

2. Grinding

Grind breast and thigh separately:

  • First pass: 8–10 mm plate
  • Second pass: 5–6 mm plate

Keep meat and equipment cold at all times.


3. Emulsification (Order Is Critical)

Step A — Primary Protein Extraction

  • Place ground chicken breast in food processor.
  • Add all the salt.
  • Chop 45–60 seconds.
  • Halfway through, add ~100 g crushed ice.
  • Target temperature: ≤ 4°C (39°F).
  • Result: sticky, elastic paste.

Step B — Thigh Integration

  • Add ground chicken thigh.
  • Add another ~100 g crushed ice.
  • Chop 45–60 seconds.
  • Keep temperature ≤ 7°C (45°F).

Step C — Final Binding & Color

Add:

  • All spices
  • Milk powder
  • Egg white powder
  • Breadcrumbs
  • Remaining ice
  • Saffron infusion liquid
  • Turmeric extract
  • Paprika

Chop 45–60 seconds until fully smooth.

Absolute maximum batter temperature: 10–11°C (50–52°F).


4. Stuffing

  • Stuff immediately into 22–24 mm sheep casings.
  • Link to desired length.
  • Prick all visible air pockets.

Do not rest overnight (fresh sausage).


5. Cooking (Same Day or Next Day)

Poaching

  • Water temperature: 74–75°C
  • Cooking time: 1 minute per mm casing diameter
    • 22–24 mm → 22–24 minutes
  • Internal temperature must reach ≥ 72°C (160°F).

Do not exceed water temperature.


6. Cooling

  • Transfer immediately to an ice bath for 10 minutes.
  • Dry thoroughly.
  • Refrigerate or freeze.

STORAGE (No Cure)

  • Raw stuffed sausage: max 24 hours refrigerated
  • Cooked sausage: 3–4 days refrigerated
  • Frozen (raw or cooked): 2–3 months

Do not vacuum-seal raw sausage.


EXPECTED RESULT

  • Color: pale warm beige with light orange-gold tone
  • Flavor: neutral, frankfurter-style, not chicken-forward
  • Texture: firm, elastic, cohesive
  • Aroma: classic hot-dog spice profile
